Spinach, Asiago & Roasted Garlic Ravioli with Tuscan Bean Hummus

Grab a fork (or a spoon, we won’t judge) and dive into this delicious duo. Our Spinach, Asiago & Roasted Garlic Ravioli, crafted to perfection by Nuovo Pasta, marries the earthy essence of spinach with the bold tang of aged Asiago cheese, all wrapped up in a comforting embrace of roasted garlic. Paired with our creamy Tuscan Bean Hummus, the richness of cannellini beans dances with aromatic herbs and spices, creating a Mediterranean-inspired masterpiece.

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Spinach, Asiago & Roasted Garlic Ravioli
  • 1 13 oz jar or can cannellini beans, drained
  • 4 Tbsp Fruity extra virgin olive oil
  • 1 Small clove of garlic
  • 2 Tbsp Fresh lemon juice
  • 1 tsp Fresh lemon zest
  • Salt and pepper to taste
  • 1 tsp crushed Aleppo peppers (another kind of MILD crushed peppers like Espelette will do)

Directions

  1. Grate lemon to gather zest and then squeeze lemon to collect juice
  2. Place drained cannellini beans, oil, garlic, lemon juice and zest in a small food processor and puree until very smooth. Season with salt and pepper and set aside.
  3. Cook ravioli separately in lightly salted boiling water according to package directions.
  4. Spread half of the hummus on a serving platter. When ravioli are ready, drain, and gently arrange on top.
  5. Drizzle with the rest of the hummus and sprinkle with crushed Aleppo peppers.
