Nuovo Pasta Spinach, Asiago & Roasted Garlic Ravioli With Citrus Spinach Sauce

We’re gonna give you the 411 on our Spinach, Asiago & Roasted Garlic Ravioli (although with flavors like these, our ravioli speaks for itself!). Sautéed spinach leaves are blended with flavorful asiago cheese, and roasted garlic then folded into whole milk ricotta, and piped into a traditional egg & green stripe square ravioli. Pair with a Citrus Spinach Sauce and that’s an out of this world dish!

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Spinach, Asiago & Roasted Garlic Ravioli
  • 2 Tbsp Butter
  • 1 Pack (9 oz.) Baby spinach (prewashed)
  • 2 Tbsp Fresh lemon juice
  • 1 tsp Fresh lemon zest
  • Salt and pepper to taste
  • 2 Tbsp Toasted sesame seeds

Directions

  1. Toast sesame seeds in a small sauté pan on LOW heat until golden (NOT brown).
  2. Grate lemon to gather zest and then squeeze the lemon to collect juice
  3. Cook ravioli separately in lightly salted boiling water according to package directions. 
  4. While ravioli are cooking, heat butter in a sauce pot and add spinach. Cook, stirring, until spinach is wilted. Turn heat off and puree with an immersion blender until smooth, adding the lemon juice, zest, and a little pasta water if needed. Season with salt and pepper to taste.
  5. Place half of the sauce on a serving platter, drain ravioli, and gently arrange on top.
  6. Drizzle with the rest of the sauce and sprinkle with toasted sesame seeds.
