Chicken Florentine Ravioli

Servings: 2 | Prep: 10 mins | Cook: 13 mins

Delicious Chicken Florentine Raviolis with sun-dried tomatoes and fresh spinach.

Ingredients

  • 9 ounces package Nuovo Florentine ravioli
  • 1 tablespoon butter
  • 1/2 cup good quality sun dried tomatoes chopped and if preserved in oil drained. 
  • 3 garlic cloves chopped 
  • 1/2 cup half and half
  • 1 1/2 cups whole milk
  • 3/4 cups Parmesan cheese
  • A few grinds of fresh nutmeg
  • Salt and pepper 
  • Pinch of pepper flakes (optional) 
  • Zest and juice of one lemon 
  • 2 cups fresh baby spinach
  • Pine nuts to garnish 

Directions

  1. Cook the ravioli according to package directions. Drain and set aside.  (reserve 1 cup from the cooking liquid) 
  2. Heat the butter in a skillet add the sun dried tomatoes and the garlic sauté for a minute until fragrant.
  3. Add the half and half, milk, and Parmesan cheese. Stir until the sauce is smooth and bubbly and the cheese is melted. Season with Salt, pepper, fresh nutmeg. It should start to thicken up slightly. 
  4. Add the lemon zest and lemon juice. 
  5. Stir in the cooked ravioli and spinach if too thick add a splash of the ravioli water. Garnish with toasted pine-nuts.
