Sweet Potato Gnocchi with Brown Butter and Almonds

Servings: 2 | Prep: 5 mins | Cook: 5 mins

The honeyed flavors of roasted sweet potato intermingle with a light butter sauce and crispy almonds to form the perfect trio.


1 Pack (9 oz.) Sweet Potato Gnocchi
4 Tbsp Butter
4 Tbsp sliced or slivered almonds
2 Tbsp Parmigiano Reggiano, grated


  1. Cook  gnocchi  separately in lightly salted boiling water according to package directions. While ravioli are cooking, place butter in a small skillet over medium-low heat and cook until butter starts to foam. Add almonds and cook until golden. 
  2. Drain gnocchi  and place on a serving platter. Spoon sauce on top and sprinkle with Parmigiano Reggiano as a finishing touch. Enjoy!
