Shrimp, Lemon, & Garlic Ravioli with Salmoriglio

Servings: 2 | Prep: 5 mins | Cook: 10 mins

Salmoriglio is a traditional cold lemon parsley sauce similar to pesto, usually drizzled on top of grilled prawns or other grilled seafood. In this recipe, it is the perfect complement for our delicate Venetian-inspired shrimp ravioli.

Ingredients

  • 9 oz. Nuovo Pasta Shrimp, Lemon & Garlic Ravioli
  • ¼ Cup fruity extra virgin olive oil
  • 1 Bunch Italian parsley
  • 1 Clove garlic
  • Juice from one lemon
  • ½ tsp Greek or Sicilian oregano
  • 1 Small fresh red chili pepper like jalapeño (if you don’t care for spicy food, use a sweet variety)
  • Salt and pepper to taste

Directions

  1. Carefully wash a large bunch of Italian parsley, pick off the leaves, and discard the stems.
  2. Place parsley leaves, garlic, oil, oregano, and lemon juice in a blender and blend until homogeneous. Add salt and pepper to taste. Set aside.
  3. Cook ravioli in salted boiling water according to package directions. Drain and place on a serving platter. Liberally drizzle with SALMORIGLIO and garnish with thinly sliced red chili pepper.
  4. Enjoy!
