Ingredients
1 Pack (16 oz.)
Nuovo Pasta Heart-Shaped Ravioli2 Tbsp Unsalted butter
1 Small shallot, finely chopped
¼ Cup Cognac or brandy
½ Cup Heavy cream
Salt and cracked black pepper to taste
2 Tbsp Roasted pistachios, chopped
2 Tbsp Parmigiano Reggiano, grated
Directions
- Place butter and shallots in a small saucepan and cook over medium-low heat until shallots are golden.
- Add cream, bring to a simmer, and add cognac; cook for a few more minutes to evaporate alcohol and to allow the sauce to thicken slightly. Season with salt and pepper to taste.
- Cook ravioli separately in salted boiling water according to package directions.
- Place half of the sauce on a serving platter, drain ravioli and gently arrange them on top.
- Drizzle with the rest of the sauce and sprinkle with roasted pistachios and Parmigiano Reggiano cheese. Enjoy!
