Heart-Shaped Ravioli with Cognac Cream and Pistachios

Ingredients

1 Pack (16 oz.) Nuovo Pasta Heart-Shaped Ravioli
2 Tbsp Unsalted butter
1 Small shallot, finely chopped
¼ Cup Cognac or brandy
½ Cup Heavy cream
Salt and cracked black pepper to taste
2 Tbsp Roasted pistachios, chopped
2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Place butter and shallots in a small saucepan and cook over medium-low heat until shallots are golden.
  2. Add cream, bring to a simmer, and add cognac; cook for a few more minutes to evaporate alcohol and to allow the sauce to thicken slightly. Season with salt and pepper to taste.
  3. Cook ravioli separately in salted boiling water according to package directions.
  4. Place half of the sauce on a serving platter, drain ravioli and gently arrange them on top.
  5. Drizzle with the rest of the sauce and sprinkle with roasted pistachios and Parmigiano Reggiano cheese. Enjoy!
