TOUR OF ITALY COLLECTION: CALABRIAN PEPPER AND SMOKED MOZZARELLA RAVIOLI Creamy Roasted Pepper Sauce

Take a tour of Italy with some delectable ravioli that will make your taste buds explode with flavor! This ravioli pairs marvelously with a creamy, savory red pepper sauce.

Ingredients

1 pack (9 oz.) Nuovo Pasta Italian Calabrian Pepper and Smoked Mozzarella Ravioli
2 tbsp butter
2 cloves garlic, chopped
1 small jar roasted piquillo peppers
1 cup heavy cream
Salt to taste
1 tbsp fresh oregano, chopped (if using dry, use only ½ teaspoon)
2 tbsp Pecorino Romano, grated

Directions

  1. Remove 2 piquillo peppers from the jar (save the rest for future use).
  2. Puree peppers in a food processor or chop them by hand.
  3. Place butter and garlic in a saucepan, and cook over medium-low heat until golden, NOT brown.
  4. Add cream and pepper puree. Bring to a simmer and cook for 5 more minutes over low heat. Season with salt to taste. 
  5. Cook ravioli separately in salted boiling water according to package directions. Drain and place on a serving platter. Spoon sauce on top and sprinkle with cheese and fresh oregano.
  6. Enjoy!
