Grilled Marinated Chicken Pesto

4 ea. 6-oz. Chicken breasts, boneless, skinless, and fully trimmed.
1 small (5.3 oz) cup plain Greek yogurt (no sugar added, no flavoring)
8 tbsp Nuovo Classic Genovese Pesto
4 ea. thick lemon slices


  1. Place yogurt in a bowl, add 4 tbsp of pesto and stir well. Add chicken to the yogurt-pesto marinade, making sure that it is well coated on all sides. Cover and refrigerate a minimum of 2 hours and up to overnight. The yogurt will tenderize the chicken and keep it moist; the pesto will add lots of flavor. 
  2. When ready to cook, grill chicken on a pre-heated grill for approximately 5 minutes per side (to an internal temperature of 165 °F), applying criss cross grill marks if desired. Do the same with the lemon slices. If a grill is not available, similar results can be achieved by using a nonstick pan on medium heat.
  3. When the chicken is cooked, top the center of each breast with 1 tbsp of pesto and the grilled lemon slices. Serve at once, accompanied by a simple arugula or classic caesar salad.
