Roasted Portabella & Truffle Pesto Potato Salad

Our Chef Crafted Roasted Portabella & Truffle Pesto is perfect for pairing with potatoes, to give them an unmistakable earthy flavor and rich truffle twist! The best part is, this potato salad only requires 4 ingredients to make: Nuovo Pasta Roasted Portabella & Truffle Pesto, salt for cooking the potatoes, Yukon Gold (or russet) potatoes, and a sprinkle of fresh chives! Salads are never boring with Nuovo Pasta Pesto!

Ingredients

  • One 7 oz. container Nuovo Roasted Portabella & Truffle Pesto
  • Salt to taste for potato water
  • 5 medium Yukon Gold (or russet) potatoes (about 2lb.)
  • 1 bunch of fresh chives

Directions

  1. Bring potatoes and 2 quarts lightly salted cold water to a simmer in a medium pot over
    medium heat; cook potatoes until tender, about 20 minutes.
  2. Wash, pat dry, and slice chives in ½” segments.
  3. Drain potatoes; let cool for a few minutes. Peel potatoes with a paring knife and cut into
    1” pieces.
  4. Transfer cut potatoes to a bowl, add Roasted Portabella & Truffle Pesto and gently toss
    without breaking the potatoes. Let the salad sit for a few minutes and then gently toss it
    again.
  5. Sprinkle with sliced chives just before serving. Enjoy!
