Gorgonzola & Sweet Basil Pesto Beefsteak Tomato Salad

This Gorgonzola & Sweet Basil Pesto Beefsteak Tomato Salad may look like an incredibly sophisticated dish, but would you believe us if we told you it takes less than 10 minutes to make? Pop open your handy container of Nuovo Pasta Gorgonzola and Sweet Basil Pesto right out of the fridge, dollop spoonfuls onto sliced Beefsteak Tomatoes, and garnish with toasted pine nuts for added crunch! Nuovo Pasta Pestos have the power to elevate simple dishes into something sensational, so keep favorite container stocked in your fridge!

Ingredients

  • One 7 oz Container Nuovo Gorgonzola & Sweet Basil Pesto
  • 4 Large ripe red or yellow heirloom or beefsteak tomatoes
  • Optional: 2 Tbsp Toasted pine nuts.

Directions

  1. Lightly toast pine nuts, if using.
  2. Wash, core, and slice tomatoes into thick vertical slices.
  3. Arrange tomato slices on a platter with a little overlap, alternating different colors if applicable.
  4. Use a spoon to place a dollop of pesto on each tomato slice.
  5. Garnish with toasted pine nuts. Enjoy!
