Tortellini Caprese Salad

Our Organic Spinach and Cheese Tortellini is mixed with our Sundried Tomato and Mozzarella Pesto for the ultimate Nuovo Dinner. It's easy, delicious, and takes just minutes to prepare this restaurant-quality meal.


1 Pack (9 oz.) Nuovo Pasta Organic Spinach & Cheese Tortellini
8 Tbsp Nuovo Sundried Tomato & Mozzarella Pesto
4 oz. Fresh Mozzarella ciliegine, drained
½ Pint Cherry or grape tomatoes, sliced in half
1 Small head of Boston bibb or red leaf lettuce, washed and leaves kept intact


  1. Cook tortellini according to package directions. Drain and shock in a bowl with chilled water.
  2. Drain again and mix with mozzarella, tomatoes, and 6 tablespoons of pesto. Arrange the salad leaves on a serving platter, drizzle with the rest of the pesto and top with tortellini salad. Enjoy!
