Linguine Scampi with Roasted Pepper, Almond & Golden Raisin Pesto

It’s time to savor exquisite Italian pasta that brings the flavors of Liguria right to your home. Pair Nuovo’s Linguine with Scampi and Roasted Pepper, Almond & Golden Raisin Pesto for a delectable meal you won't forget!


1 Pack (9 oz.) Nuovo Linguine
2 Tbsp Unsalted butter
2 Cloves garlic, chopped fine
12 ea. Medium-size shrimp, peeled and deveined
Salt to taste
½ cup Nuovo Roasted Pepper, Almond & Golden Raisin Pesto
1 Sprig fresh Italian parsley, chopped fine


  1. Place butter and garlic in a large sauté pan and cook over medium heat for a few minutes until golden. Add shrimp and cook for 5 minutes, turning them once. Shrimp should reach an internal temperature of 160 °F. Remove from heat. Add pesto to shrimp sauce and stir well. Keep warm.
  2. Cook pasta separately in salted boiling water according to package directions. Drain and add to shrimp sauce in a sauté pan. Mix well and transfer to a serving platter, arranging the shrimp on top. Sprinkle with parsley as a finishing touch.
