Salad Greens with Chicken Pesto

Servings: 2 | Prep: 10 mins | Cook: 5 mins

Who doesn’t love a good salad - especially when it’s Italian inspired? 🇮🇹 Taste the authentic, classic mixture of fresh greens and juicy chicken tossed with our Basil Genovese Pesto.


2 ea. Rotisserie chicken breasts (previously roasted)
6 Tbsp Nuovo Original Basil Genovese Pesto
2 Tbsp Lemon juice
1 Package (5 oz.) triple-washed mesclun greens 
1 Tbsp toasted pinoli nuts


  1. Use chilled, previously-roasted rotisserie chicken breasts and dice them into 1” pieces.
  2. Toss chicken with 4 Tbsp of Basil Genovese Pesto. Place mesclun greens, the remaining 2 Tbsp of pesto, and lemon juice in a bowl and mix well.
  3. Transfer salad to a chilled serving bowl and place the chicken on top.
  4. Garnish with toasted pinoli nuts. Enjoy!
