Roasted Portabella & Truffle Pesto

Utter decadence at your fingertips, that’s cooking with Nuovo Pasta! Earthy, roasted portabella mushrooms and rich truffles are a perfect pairing to tender, juicy filet mignon in a 5-star dining experience ready in no time!


4 Beef Filets Mignon, 6 to 8 oz each, fully trimmed and ready to use. To properly cook, they should be about 2 inches thick.
Salt and pepper to taste
2 Tbsp butter
1 (7oz) Jar Nuovo Roasted Portabella & Truffle Pesto
Fresh thyme sprigs for garnish


  1. Preheat oven to 450 F.
  2. Pat filets dry with a paper towel and season with salt and cracked black pepper to taste. Set aside.
  3. Heat a cast iron pan (or oven-proof heavy duty skillet) on stovetop over medium heat.
  4. Add butter; when melted, add filets and pan sear for about two minutes per side, moving them only once to turn them. After this, remove pan from stovetop and place it in the middle rack of the pre-heated oven to finish cooking. Cook the filets to your liking: about 2 to 3 minutes more for rare and up to 12 minutes more for well done.
  5. Remove pan from oven and let the filets rest a few minutes before serving.
  6. Top each filet with a generous dollop of Nuovo Roasted Portabella & Truffle Pesto.
  7. Serve with mashed potatoes and steamed green beans or asparagus for the perfect meal!
