Roasted, sweet pumpkin blends with soft ricotta and rich nutmeg - and that’s just inside the ravioli! Our Pumpkin & Sage Ravioli is topped with all the best fall flavors, like sweet corn, fresh red pepper, and salty black olives. This is the ultimate autumn-inspired dish to make that everyone at the table will enjoy.
Ingredients
- 1 Pack (9 oz.) Nuovo Pasta Pumpkin and Sage Ravioli
- 4 Tbsp Butter
- 1/4 cup fresh sweet corn kernels
- 1/4 cup pitted black olives, sliced
- 1 sweet red pepper
- 1 Tbsp Italian parsley, chopped
- 2 Tbsp Parmigiano Reggiano, grated
Directions
- Clean red pepper by removing stem and seeds and cut it in 1″ diamond shapes, or any other fun shapes if you prefer.
- Cook ravioli separately in salted boiling water according to package directions. While ravioli are cooking, place butter in a small saucepan over medium heat and cook until it starts to foam. Add corn and red pepper and cook until tender but still brightly colored. Top with black olives.
- Season with salt and pepper to taste. Drain ravioli and place on a serving platter. Spoon sauce on top and sprinkle with parsley and Parmigiano as a finishing touch. Enjoy!
