Grilled Chicken Mediterraneo with Artichoke & Olive Pesto

Servings: 2 | Prep: 5 mins | Cook: 15 mins

Summertime is grilling time! You can grill just about anything and then add this fragrant pesto on top.


2 ea. Chicken breasts, boneless, skinless, and fully trimmed (about 6 oz. each)
2 ea. Garlic cloves, chopped
2 Tbsp Olive oil
Juice of one lemon
Salt and pepper to taste
4 Tbsp Nuovo Artichoke & Olive Pesto


  1. Coat chicken breasts with chopped garlic, olive oil and lemon juice. Season with salt and pepper and let rest for a few minutes.
  2. Grill chicken on a pre-heated grill for 3 to 4 minutes per side, applying crisscross grill marks (cook to an internal temperature of 165 °F).
  3. When the chicken is cooked, top each breast with 2 Tbsp of Nuovo Artichoke & Olive Pesto
  4. Serve at once, accompanied by a simple arugula salad or a classic Caesar salad. Enjoy!
