Four Cheese Sacchetti Greek Salad

It wouldn’t be summer if you didn’t savor a fresh salad! 1 Pack (9 oz.) 4 Cheese Sacchetti
½ Small red onion, sliced
2 Large ripe tomatoes, diced
1 Small cucumber, deseeded and diced
4 oz Greek feta cheese, crumbled
¼ Cup Kalamata olives, drained and pitted
1 Bunch Fresh oregano or marjoram (or both), stems removed
4 Tbsp Extra virgin olive oil
2 Tbsp Fresh lemon juice
Salt and pepper to taste


  1. Cook sacchetti in lightly salted boiling water according to package directions.
  2. While sacchetti are cooking, whisk the oil with the lemon juice and season with salt and pepper; set aside.
  3. Wash herbs and discard stems; if leaves are large, chop them. Dice onions, tomatoes, and cucumbers. Once sacchetti are cooked, Drain and shock in a bowl of chilled water. Drain again and gently toss sacchetti with the onion, tomatoes, herbs, cucumber, feta, and olives in a bowl along with the lemon dressing.
  4. Mix gently until sacchetti are thoroughly coated with seasonings. Transfer to a serving platter and enjoy!
