Truffled Gnocchi with Brown Butter and Penciled Asparagus

Soft on the outside, delicious on the inside, Nuovo’s Truffled Gnocchi is the perfect meal to keep you warm for the winter. All of the flavors of aromatic truffles are infused inside of each soft, pillowy bite and covered in a warm brown butter sauce.

Ingredients

1 Pack (9 oz.) Nuovo Pasta Truffled Gnocchi
1 Small bunch of pencil asparagus (8 oz)
4 Tbsp butter
Salt and cracked black pepper to taste
2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Wash and prepare asparagus by removing the white and fibrous bottoms and slicing the green tender tops into 2 ” segments. 
  2. Place butter in a small saucepan over medium-low heat and cook for two minutes until it starts to foam and turns golden in color. Add cut asparagus and saute for a minute, stirring often to ensure even cooking. Be careful NOT to overcook! Season with salt and pepper to taste.
  3. Cook gnocchi separately in salted boiling water according to package directions. Drain gnocchi and add to the asparagus and butter sauce, mix gently, and transfer to a serving platter. Sprinkle with grated Parmesan cheese. Enjoy!
