Chicken Cacciatore Ravioli With Vegetable Ragu

Making the perfect Chicken Cacciatore doesn’t have to mean spending hours in the kitchen, especially when you can have it stuffed in sheets of fresh pasta instead! Pair our authentically tuscan Chicken Cacciatore Ravioli with a Vegetable Ragu for an incredibly easy, hearty meal to make any day of the week feel like a celebration!

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Chicken Cacciatore Ravioli
  • 2 Tbsp Olive oil
  • ¼ Cup Red onions, ¼” diced
  • ¼ Cup Carrots, ¼” diced
  • ¼ Cup Celery, ¼” diced
  • ½ Cup Dry red wine
  • 1 14 oz Can of Italian diced tomatoes
  • Salt and pepper to taste
  • 1 Tbsp Italian parsley, chopped
  • 2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Place oil in a small saucepan over medium heat.
  2. Add carrots, celery, and onions, and cook until slightly caramelized; add wine and cook to evaporate alcohol. Add tomatoes and cook for five more minutes. Season with salt and pepper to taste.
  3. Cook ravioli separately in salted boiling water according to package directions.
  4. Spoon half of the sauce on a serving platter, drain ravioli and place on a sauce. Spoon the rest of the sauce on top and sprinkle with parsley and Parmigiano as a finishing touch.
