Italian Beef Ravioli

Easy and quick beef ravioli with a fresh tomato sauce.


9oz package Italian beef ravioli
salt and pepper to taste
Pinch of red pepper flakes
3 garlic cloves minced
3 tablespoons extra-virgin olive oil
1 pint cherry tomatoes
fresh basil leaves, roughly chopped (a handful)
Parmesan cheese, for serving


  1. Cook the ravioli according to package directions. In the meantime let’s make this simple sauce. 
  2. In a skillet, heat 3 tablespoons of olive oil over medium heat, add the garlic, stirring frequently, until the garlic is fragrant (don’t burn it) about a minute. 
  3. Add tomatoes and cook, stirring, until tomatoes begin to burst. You can help them along by pressing on them with the back of a spoon. This will help them release their juices and create a nice sauce. 
  4. Continue to cook for 5 minutes longer. Stir in basil and season to taste with salt and pepper.
  5. Toss your sauce with the ravioli and shave Parmesan cheese and fresh basil all over the top.
