Fragrant Lemon & Mascarpone Ravioli

Bright, fresh, and ready in minutes—this simple springtime dish brings together Nuovo’s Fragrant Lemon & Mascarpone Ravioli with tender asparagus, golden shallots, and a zesty lemon butter finish.

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Fragrant Lemon & Mascarpone Ravioli
  • 4 Tbsp Butter
  • 2 Small shallots, chopped 
  • 1 Small bunch of pencil asparagus (8 oz)
  • Zest of one lemon (better if organic)
  • Juice of one lemon
  • Salt and pepper to taste
  • 2 Tbsp Parmigiano Reggiano, shaved

Directions

  1. Wash and prepare asparagus by removing the white and fibrous bottoms and slicing the green tender tops into 1” segments
  2. Wash and zest an organic lemon
  3. Chop shallots
  4. Place butter and shallots in a small saucepan and cook over medium-low heat until golden
  5. Add lemon juice and cut asparagus and heat for a few minutes until asparagus are cooked but still bright green and al dente
  6. Season with salt and pepper
  7. Cook ravioli separately in lightly salted boiling water according to package directions. Drain and place on a serving platter
  8. Surround with the cooked asparagus and top with the lemon butter sauce
  9. Sprinkle with lemon zest and cheese. Enjoy!
